Cheese Cake                             from Irma Renz

Cake

125 gr. Butter  (1 stick)                                                Filling

¼ cup sugar                                                     500 gr. cottage cheese

250 gr. flour   (1 ½ cups)                                  200 gr. sugar  ( ¾  cup)

1 pkg. Vanilla sugar                                          2 – 8 oz. Cream cheese

1 tsp baking powder                                         1 pkg. German Vanilla pudding

                                                                        1egg and ½ liter milk

                                                                        3 tbs. oil & juice of half lemon

Mix for bottom all ingredients and press into bottom of round tort pan.

Mix all filling ingredients and pour on top. Bake at 325 degree 1¼ hours. Try English vanilla pudding, or lemon pudding and then only ¼ cup sugar.

 

Old Fashion Cheese Cake

 

1 pkg.  yeast                                                     ½ cup butter

¼ cup warm water                                            2 cups flour

½ cup butter                                                     1 egg & ½ tsp vanilla

 

Pineapple Filling

3 tbs. sugar                                                       1/8 tsp salt 2 tbs. flour                                                                                          1can 13¼crushed pineapple with juice

 

                                                            Cheese Filling

2 eggs                                                              2 cups sm. Cured cottage cheese

¾ cup sugar                                                      1-8 oz. Pkg. cream cheese

2 tbs. flour & 1 tsp vanilla                                 optional: ½ cup flaked coconut

                                                           

                                                            Glaze

1cup powder sugar- 2 tbs. milk and ½ tsp vanilla

 

Mix yeast with warm water. Put flour into large bowl, with a dent in the flour add the yeast with a dash of sugar. .Let  rise 10 min. Add melted butter, sugar, egg and vanilla. Mix dough till crumbly. Roll   2/3 of dough into a 16x12 rectangle, put into 9x13 inch baking pan, pressing dough up the sides. Spread pineapple filling onto dough. (Combine ingredients and cook over med heat until thick.) Cool.  Spread the cheese filling.  Roll out remaining dough to a 9x13 rectangle and place on top, sealing edges by pressing dough together.  Cover, let rise in warm place 60 min.  Bake at 375 degree for 30-35 min. Still warm spread the glaze on top.  Cool Serves 14
