Rhubarb Cake              German                     

!-1/3 cup flour and 1 tsp baking powder

2 tbs sugar

1.2 cup butter

2 egg yokes

first Topping                                          second Topping

4 cups rhubarb –cut into small pieces                ¾ cup sugar

1-1/2 cup sugar  and a little salt                         ¼ tsp cream of tartar

2 egg yolks

4 level tbs flour

 

Mix four first tops and put into a 6x10 baking pan.

Mix the next four and put on top. Bake at 350 degree 30-40 min.

The last three, whip the eggs, add sugar and cream of tartar pour on top of cake and bake another 10-15 minutes till golden brown.

 

                    Rhubarb Upside Down Cake                     German

 

1/4/cup melted butter                                        1 cup sugar

1 cup brown sugar                                            1 cup flour

2 cups rhubarb cut into small pieces                  ¼ tsp baking powder

2 eggs separated                                               ¼ tsp salt

½ tsp vanilla

Mix butter and brown sugar and put into a square pan.  Add rhubarb.

Add to the egg yoke 3 tbs water and beat tight light and gradually add 1cup sugar. Then add all the rest. Fold in beating egg whites.  Bake at 375 degree for 45 minutes.
