"Pigs in a blanket"- Rouladen

 (handed down from generations)

Ask your Butcher to cut real thin slices of top sirloin or top round. Size about 8x6 inches.  Lay them flat salt and pepper them. Add bacon cut to the size of the meat. Add cut up onions. Roll the pieces and put a toothpick through the meat to hold it together. Brown the Roladen in butter and add water with some onion mix. Simmer good 1-2 hours  till done. Take the Roladen out and make the gravy with the juice left. In some cold water add flour and sour cream. Mix well and add to the boiling juice. Make it creamy. 

Good with it is “Sweet sour red cabbage”

You can just buy it finished or from scratch.  Cut up the red cabbage and add to a cooking pot. Add little water. Fry bacon pieces with cut up onions and add it all to the cabbage. When done add (to taste) white vinegar and little sugar.

Also good with the Rouladen are Potato Dumplings

Only make little dumplings like finger thick and put into boiling water. About 5 minutes they are done.  These are so good with  gravy.

Leftover dumplings: fry in bacon-yummy!
