Cake
125 gr. (
5 oz butter)
Topping
125 gr.( 2/3 cups sugar)
5 egg whites
5 egg yokes
125 gr.( 2/3 cup sugar)
½ tsp vanilla
½ tsp vanilla
1 tsp baking powder
½ tsp cinnamon
160 gr. (6.4
oz flour)
Filling
1 can of goose berries or other fruit and ½ liter or
one pint light cream
Mix butter, sugar, vanilla and slowly add the egg
yokes till creamy. Add the flour and baking powder. Divide in half on two baking
sheets or on two round cake pans. Whip
the egg whites, add sugar, vanilla and cinnamon.
Put on top of dough. Bake at med heat 325-350 degree for about 20-30
minutes. Let cool.
Mix goose berries with the whipped cream and sugar to
taste. Put on one of the cakes. Then put the other on top.

Cake
125 gr. butter (
1 stick) 3 lbs apples grated very, very fine
125 gr. Sugar (1/2
cup) little lemon juice
1 egg a little vanilla
¾ liter apple juice 3 ½ cups)
25o gr. Flour (2 cups)
2 German vanilla pudding
½ pkg.
German baking powder
(I tried English 4.6 oz Vanilla)
(or 2 tsp. Baking powder) Whip cream
Mix dough. Put half of dough on bottom of greased
spring form and the rest around the side pretty high. Fill with apples. Cook pudding with apple juice (no milk) and
pour over the apples. If apples are
tart add 2 tbs. of sugar if you ar using the German pudding.
Bake at 325 degree for 1½ hours. Cool.
Before serving add the whipped cream on top of the cake and garnish with
chocolate shavings.
